Ingredients
For the Mini Ghee Idli
- 20–24 mini idlis
- 1½ tbsp ghee
- 5–6 fresh curry leaves
- 2–3 tbsp Moringa Podi

- 2 tbsp chana dal
- 2 tbsp urad dal
- 1 tbsp white sesame seeds
- 2 dried red chillies
- ½ tsp cumin seeds
- ½ tsp asafoetida (hing)
- 1½ tsp Shreyasam Pure Moringa Powder
- ½ tsp jaggery powder (optional)
- Salt to taste
Method
Step 1: Roast the Ingredients
Dry roast the chana dal and urad dal over low heat until golden and aromatic.
Step 2: Add Spices
Add sesame seeds, cumin seeds and dried red chillies. Roast for another 1–2 minutes until fragrant.
Step 3: Cool
Switch off the flame and allow the roasted ingredients to cool completely.
Step 4: Make the Moringa Podi
Transfer the roasted ingredients to a mixer. Add Shreyasam Pure Moringa Powder, jaggery powder, asafoetida and salt.
Step 5: Grind
Grind into a slightly coarse powder. Store in an airtight container.
Step 6: Prepare the Idlis
Heat ghee in a pan and add curry leaves. Let them crackle.
Step 7: Toss the Idlis
Add the mini idlis and gently toss for 1–2 minutes so they are coated with ghee.
Step 8: Add the Moringa Podi
Reduce the flame and sprinkle 2–3 tablespoons of moringa podi over the idlis.
Step 9: Mix Well
Toss gently until every idli is evenly coated with the podi.
Step 10: Serve
Serve hot as a wholesome breakfast, lunch box meal or healthy evening snack.
